Greetings from Cobalt Grille,
This month we venture to the Mediterranean; Italy and France to be specific. Nearly forty years of doing business in France and Italy have given Kermit Lynch a level of expertise that few in the wine industry can boast. Countless hours with growers in some of the most famous vineyards and cellars of Europe have offered more than just a casual look at what it takes to be a great grower, let alone a great winemaker. Every year, Kermit enjoys a creative collaboration with some growers to find the best of their selections. Together, they work towards creating a final blend that showcases the region in all its glory at a price point that is difficult to match.
Chef Alvin has collaborated with Bonnie Lawrence of Savor The Olive (another Hilltop Jewel) to incorporate some of her signature Oils and Vinegars into this special menu.
So please join Chef Alvin Williams, Sommelier Arden Allen, Alex Carr & Megan Jones of The Robins Cellars for this delicious six course food and wine pairing!!

Amuse- smoked fish & goat cheese, English cucumber, *Milanese Gremolata oil.
Berto Vermouth Aperitiv Dia Tradission BlancoFirst Course- Shrimp & Burrata Salad, Strawberries, Pistachio dust, Arugula, *Strawberry Aged Dark Balsamic vinegar.
Elvio Tintero, Langhe Arneis ’17

Second Course- Seared Salmon, green beans, quinoa, cherry tomatoes, Kalamata olives, *Tuscan herb oil, *Neapolitan Herb vinegar.

Third Course- Grilled Pork ribeye, white bean & cipollini onion stew, bacon demi jus, *Black Currant Aged Dark Balsamic vinegar.
Domaine De Fontsainte Corbieres Rouge ’16

Main Course- Spice rubbed N.Y Strip, Fingerlings, Portabella Ratatouille, *Black Truffle Infused Olive oil.
La Basia, Garda Marzemino Le Morene ’14

Dessert- Lavender Poached pear, orange cream, *Rose Aged White Balsamic vinegar.
